This bread banneton is a must have in any bakers kitchen! Our baskets are second to none when it comes to fermenting dough, the high quality, natural rattan is proved to draw moisture away from the dough and allows for an even fermentation. It saves the warmth of the bread dough, but absorbs moisture, resulting in a fermentation that's regulated leaving you with a delicious even texture and cri crust. Our proofing baskets get tested by our supplier every 5 years by the DGUV Test Prüf- und Zertifizierungsstelle (a German test and certification centre for food and package). They therefore comply with the high requirements of the DGUV for food processing machinery and hygiene. It is of the upmost importance to us that we source our bannetons from sustainable origins and of our suppliers that they work sustainably. Our suppliers contribute to eco-management-system (EMAS) since 2018. EMAS is seen as one of the most demanding systems for sustainable environmental management around the world. Before the first use, you must 'break in' your banneton. Be sure to spray a thin layer of water on your new proofing basket, flour as usual, tip out any excess flour and allow time to dry. You can then flour the banneton as usual before each use. Cleaning your banneton: - Clean the proofing baskets every 3-4 weeks with a brush to remove any excess flour. - After that, put the proofing baskets into the oven at 120 - 130 Degrees C (250 - 270 degrees F) with plenty of water vapour for about 20 minutes. If you have to put them in the dishwasher, do not add any water to the banneton. - Clean the baskets every 6 months (or more often if necessary) thoroughly with clear water and let them dry in the oven. After the basket has dried, spray on a new light coating of water.
