What's the difference between this and the previous version, without new in the title?

Don't have the older version to compare but looks the same, nothing different in the sales pitch or specs. Great soldering iron though.

Does it have a automatic shut-off? I don't wanna burn the barn down ;)

Dear customer: This pro32 has a automatic shut-off. It will trigger the sleep mode when you leave it for more than 3 minutes, and the temperature will automactically adjust to preset sleep temperature.

Which model adapter did you all get to replace the supplied one?

You mean the Power Mains Adapter ?So I habe bought a strong 12 V to 19 V (KFZ) Notebook Charger. (One of the supplied connectors fits)For Home Use, I also recommend a good Notebook Adapter with long Cables. I don´t have bought one till noch, but maybe:https://www.amazon.de/VGP-AC19V30-VGP-AC19V31-VGP-AC19V32-VGP-AC19V37-VGP-AC19V41/dp/B0084CKTG6/ref=sr_1_31?ie=UTF8&qid=1480792139&sr=8-31&keywords=laptop+adapter

Is the Ground cable necessary? Can this be used without it?

The ground cable is for ESD protection only. I have an ESD protected workspace and so don't use it. It works fine without it.
