Can you disable the auto-off function or run this scale from an external power source?

Unfortunately it is not possible to disable auto off. There is no external power source socket either.

Do you have to use the weigh pan on this? Or can it be used without as I think the weigh pan would be a little small for my needs

No, you do not have to. There is a raised platform to weigh on.
