I tried to enjoy this pasta. With so many good reviews I thought I would. If you don't have pasta, it's a passable substitute - better than the rest I think. But it's a little too flavorless, mushy and structureless for me. I will not be buying this again.

The worst low carb noodle/pasta alternative I've tried yet
The only good thing I had to say about this was the concept. Besides that, nothing. It had potential straight out of the strainer. Although I knew (from reviews) that the flavor was going to be bland as heck and that the texture was going to be off-putting, I really had high hopes for this product. I figured that if I can put up with eating shirataki noodles - which I jokingly refer to as "chewy, tasteless rubber bands" - then I can give this a gander.Fresh out of the boiling water it wasn't offensive tasting or in texture. I used 1 serving with my spaghetti sauce. I noticed that my sauce got really watery & chalked it up to wondering if I hadn't let it strain long enough. The first few bites were manageable. I thought it soaked up some of the sauce (unlike shirataki noodles where the noodles basically swim in the sauce but not soak it up) & thought that was nice for a change because maybe it'll cover the blandness of the pasta so I can manage to overlook the strange texture. With each additional bite, the texture and flavore became worse and worse. I cooked it al dente because I knew it was going to be in my steaming sauce so it might continue to soften. With each fork full, the pasta started to crumble and that, along with the flavor began to resemble something like that of wet all purpose flour with a little bit of bite. The pasta crumbled in my mouth into something paste-like. And I'm not referring to how when foods are chewed, it gets mulched down with your saliva to ease the passage down your esophagus. It literally felt like the product was losing every last bit of moisture the more you chewed it. That was a rough serving of spaghetti to put down.I didn't want to be wasteful though so I gave it another chance after it sat drained for about a couple hours. When I put the sauce in it this time the same thing happened. It seemed to have pulled out whatever water was in the pasta and made my sauce very watery. The pasta was even more brittle and crumbled apart even faster. I could not stomach that serving and threw it away. I felt sad that I wasted my tasty sauce.It's too bad that I'm not allowed to return my unopened package (I bought 2). For the amount I spent on it, I'll probably try to think of another way to use it. Maybe blend the cooked pasta and use it as a thickener for a keto soup or something. Utterly disappointed! So far I've tried konjac/yam based noodles (shirataki), soybean fiber/yam based noodles (Healthy Noodles from Costco), zucchini noodles, kelp noodles and these. These are by far the worst. Disappointed that I can't return the unopened package. Maybe one day I'll find some sort of keto soup that I can pulverize it & use as a thickener of sorts.

So here's the deal...
So you will find both good and bad reviews for all the various "Great Low Carb Bread Company" pastas. I think they mostly hinge on one thing. I've tried the ziti, the orzo, and the rotini. The texture isn't bad. It's a bit crumbly in texture but approximates regular pasta pretty well. We've used it by just putting sauce over the top and also in baked applications (Mac and Cheese and Baked Ziti). We've used the orzo in soup. So what's the issue? It does NOT absorb salt from the cooking water. If you are used to nicely seasoned pasta that you get straight from your salted cooking water, you will be disappointed. If you realize what's happening then you can add additional salt later in the process and you should be quite satisfied. Salt the heck out of the water and the pasta will get /some/ flavor, but not as much as you would think. Just keep this in mind and it makes a perfectly fine low carb option.

Kinda crunchy texture.
It’s just ok. Not a miracle pasta replacement. Weird texture tastes off, but if you are dying for pasta it will work.

Pricey but worth it!
Out of all the pasta substitutes I've tried, Great Low Carb Bread Company is my family's favorite. It is, unfortunately, super pricey, so we don't eat it very often. But when we do it's fantastic. It holds up very well to heavy cream sauces and melted cheese. The taste is just okay on it's own but you don't really notice it when it's covered in Alfredo, marinara, or garlic butter. Regular pasta is roughly $1/LB so it was difficult to get used to paying around $11 for just 8 oz of this Low Carb Pasta. But it's worth it to keep my family healthy. I will only buy this brand from now on!

This was not good. I tasted it plain to check the cook after the suggested time, and I regretted my purchase immediately. The pasta doesn’t really soften up, and the longer you leave it in the water in hopes of it getting softer, the penne cracks and falls apart. Adding sauce and some sliced sausage made it a little better, but I’ll never buy it again. Be aware of the amount of fiber, too. You may need to be near a toilet for a bit

if your doing keto, this is great. cook twice as long as normal pasta to get the texture soft. i missed pasta, glad for these. enjoy
