The ONLY GF bread that tastes good without toasting, with a texture similar to wheat bread
There are several bougie smaller-batch GF breads that I really like. However, ALL of them must be toasted. This one does not. In fact, it is not meant to be stored in the freezer like most GF breads. It can be stored on the counter for, I believe, a few days but maintains its pillowy soft texture if you store it in a ziplock bag in the refrigerator. Hallelujah!! I don't always want to eat a sandwich made with toasted bread...that's not how most sandwiches are served. Important to note: Canyon Bakehouse makes many flavors of GF bread. Only a couple maintain the soft texture and don't need to be toasted. For example their Mountain White GF bread does need to be frozen and toasted. If you look on the company website, only the ones that say "Stay Fresh!" are the ones that have the soft texture without toasting.

very happy with this bread
Ok, so it doesn't taste like regular bread. The pieces are small, and they fall apart some. BUT, it is the best GF bread I have tried. The ingredients are not full of 'gums' so my tummy isn't upset. MUCH better than UDIs which I have eaten for years. The flavor is darn good. I am thrilled I found this bread. It is just an expensive choice, but that's specialty groceries for you.

Not bad.
I bought this because the dairy free white bread that I like was out of stock. I know someone who can't eat gluten and they said that this one is pretty good... It's not bad at all in my opinion. The crust reminds me of a sweet artisan brown wheat bread I got at Whole Foods or something a while back, but it's tough and a bit grainy in texture. The inside of the bread though is actually quite lovely, however. It's light and fluffy, and there's a nice sweetness there too. The price is a little steep compared to my usual dairy free white bread, but that's probably because it's gluten free- however, it's less than half the size of my normal bread. This bread is actually quite nice but it'd be better if it was a little closer in price to other bread or at least a bit bigger so that people who actually need (not me) gluten free stuff can eat their bread in peace- and not lose their whole wallet on bread.

Just ok
This bread tastes ok for gluten free bread but I will no longer buy it because I just found out the company gives money to the Republican Party and I don't support that.

Omg! I get actual bread?
I have a fairly severe gluten allergy. Not celiac, but it causes pretty awful psoriasis all over my body and incessant itchy when I eat highly processed wheat products. I found this, had my doubts, but I miss bread :( and omg!!! It tastes and geeks and can be used for all the things bread is? WHAT?! The only downfalls they are very small loaves/slices. About half that as a piece or orowheat bread. So depending on the meal, plan accordingly. It can be frozen and thawed well, and lasts just as well as normal bread as far as I can tell. And the best part? It tastes and feels like you're eating an actual toast/sandwich/French toast/stuffing, anything. It's just expensive for the size.
